Honig Cabernet Sauvignon
Vintage
Abundant winter rains and a coolish spring lead to later budbreak and flowering. Summer was mild and virtually uninterrupted by major heat spikes. Fall temperatures were moderate. An overall mild growing season lead to fully developed flavors and tannins.
Winemaking
The fruit for this wine comes from both our sustainably farmed vineyard in Rutherford, and from local Napa Valley vineyards. Each vineyard block was harvested and made into an individual lot representing that block. The wines were pressed off the skins from 10 to 30 days after crushing. Bottled in June 2020.
Aging
Aged for 18 months in French and American oak barrels. 29% new American Oak, 17% new French Oak, 54% used oak barrels.
Winemaker Notes
Currant, plum and black raspberry aromas are intermingled with a mélange of black pepper, nutmeg, and a whisper of dried herbs. The aromas flow through to similar flavors on the pallet. Sweet oak pulls it all together, complementing the lush textures. This delicious, multifaceted wine can be enjoyed now and should age beautifully though 2029 and even through 2034. Drink one now and save one to savor later.
