The idea behind Barrell Craft Spirits is to “explore the unique effects of different distillation methods, barrels, and aging environments, and bottle them at cask strength.” By definition, the bottlings of Barrell Spirits are limited in nature with new releases hitting the market frequently.

Barrel J807 is a blend of rums from Barbados, Jamaica, Martinique, and Guyana, with the Jamaican rum comprising 80% of the blend. The marrying and finishing were done in a single ex-Calvados cask. Stewed apples, dehydrated lemon, and a hint of maple syrup on the nose. On the palate, an opening gambit of fresh, grassy sugarcane is quickly accompanied by the oxidized orchard notes of aged Calvados before swinging to pencil eraser and a haunting whisper of Jamaican funk. This rum is like having a dream about the Caribbean that fades in detail with waking but stays with you the rest of the day.
